Kimchi!! I was just researching that today! I read a book by Elizabeth Kim called Ten Thousand Sorrows and it referenced kimchi... I'm curious to see how well it tastes! Definitely take pictures of it when you make it!
My Grandpa was in the Korean war, and he never really talked about the actual war going on IN Korea - he was stationed in Germany and then in the Marshall Islands (Enewetok Atoll)... he passed away almost a year ago in April, and something just struck me lately to learn about the Korean's side and what THEY went through during the war. The book by Elizabeth Kim... Great book, LOVED it, very sad, will spark some anger, but there's definitely lessons to be learned from that book.
